Strawberry and Peach Stew

Bold tones of ginger and peach, mixed with the summer freshness of strawberries and coriander. Requires one hour cool-down time, minimum, before serving. Makes enough for 6-8 individual salads.

1/2 cup Red Wine Vinegar
3/4 cup Olive Oil
1 Teaspoon ground Coriander
1 Teaspoon ground Ginger

1/8 cup dark Agave syrup
4 packets dry Stevia
Dash of freshly ground Black Pepper

3 fresh Peaches
5-10 fresh Strawberries

Poor the Vinegar and Olive Oil into a medium cooking dish (glass works well, as it does not react with the acidic ingredients), add Coriander and Ginger, and start to simmer on medium-low heat. Add the Agave syrup and Stevia, a dash of freshly ground Black Pepper, and stir the mixture thoroughly. Cut the Peaches and Strawberries into smallish pieces while it heats.

Once the liquids have come to a good simmer, add the chopped Peaches. Depending on the ripeness of the fruit, you can leave it simmering longer (firm or unripe peaches should be left to simmer 10+ minutes). Once the peaches have begun to meld with the liquids, stir in the sliced Strawberries and turn off heat. Once cooled, place in the refrigerator until serving time.
